Kids will love baking these Vegan Carrot and Courgette Cupcakes.

This years Healthy Eating Week 10-14th June coincides with The Alzheimer’s Society’s Cupcake day held on 13th June 2019.

So I decided to post a delicious healthy alternative to the much loved chocolate cupcake!

These cupcakes are made with carrot and courgette so have more fibre than your normal cupcake.carrots

But they are light and springy so you wouldn’t know it.

My son doesn’t like courgette, but he didn’t notice it in these cupcakes!Courgette

My son also has an aversion to carrot cakes. But he enjoyed this recipe.

My son will bake the next batch now that he knows that the secret ingredient was courgette! 

I’ve added cinnamon to these cupcakes.

As well as improving the flavour of food research has uncovered its many health benefits.

Further down the post I’ve added a section on some of the benefits science is discovering about cinnamon.

Alzheimer’s Cupcake day is a day to raise funds and awareness of Alzheimer’s disease.

Although any day of the year is a good day to raise awareness and understanding of Alzheimer’s.

Even if you can’t donate money it is still a good chance to discuss Alzheimer’s with your kids and have fun baking cupcakes!Kids Bake! Vegan Cupcakes

Many kids are not aware of what Alzheimer’s is but others sadly may have had first hand experience with a family member.Grandparent

For both cases its worthwhile clearing up any misconceptions and fostering an empathic understanding of what their loved ones and many others are going through.

 Why not bake up a batch of cupcakes to share with family members, to say thank-you, or donate them to your local care home?

What is Alzheimer’s disease?

The brain’s neural network send electrical-chemical messages throughout the neural pathway. This pathway encompasses your entire body!

Synapses are the cells connections which transmit and input messages.

Your body gathers information from the environment such as smells, noise, taste, pain and touch. Your neural network sends this data to your brain.

In turn the brain sends messages back to your eyes, ears,nose, skin and mouth.

As a result you act in a certain way such as pull your hand away from the hot stove, use your spoon to eat your breakfast, walk across the road, go to the toilet, feel hungry and tired.

Alzheimer’s is a medical condition which causes the brain’s cells to decay and die.  As a result abnormal proteins called ‘plaques and tangles’ are formed where the brain cells have died.

People with Alzheimer’s have disrupted neuronal connections due to the increase in plaques and tangles.

Due to this disruption the  brain cannot send messages effectively.

Therefore people with Alzheimer’s often appear confused as their brain has a difficult time decoding or sending messages.

 Symptoms can include memory loss, language problems, problem solving and decision making.

A person with Alzheimer’s may forget names, words for objects, or where they are at that moment in time.

 Actions that were once mastered ,such as tying their shoelaces, can become a struggle.

Forgetting about the bubbling saucepan on the stove or forgetting that you are ironing are also common problems.

As Alzheimer’s is a progressive disease the severity of symptoms may take several years to advance and become noticeable.

The Benefits of Cinnamon


Some research has evidenced the powerful medicinal benefits of Cinnamon.

 Studies have even shown promising effects for the future use of cinnamon in reversing Alzheimer’s symptoms. The chemical makeup of cinnamon may be able to stop protein build build-up up within the brain. Check out this article for more information. 

Cinnamon is one of nature’s powerful medicinal treasures so it’s worth adding it to your food whenever possible.

Although always check with your medical practitioner before making any major nutritional changes. As too much of a good thing can be harmful.

Cinnamon is full of antioxidants which can help our bodies fight ‘free radicals’ that find our way into our bodies.

Free radicals can form as a by-product of breathing oxygen, as well as from pollution, pesticides, processed foods and other sources.

Alzheimer’s is a devastating disease. If your loved one has been diagnosed with Alzheimer’s there is a lot you can do to support them!

Focus on the present and making lots of happy memories.

Even if your loved one forgets their memories they won’t forget their inner feelings or emotions.

If you don’t have loved ones with Alzheimer’s then bake these cupcakes and think about those who do have Alzheimer’s. Maybe donate some to a rest home?

Vegan Carrot and Courgette Cupcakes

Vegan Carrot and Courgette Cupcakes

Carrot and Courgette cupcakes with cream cheese frosting, crunchy walnut and zesty tangerine rind

  • Cupcake/muffin tray, paper cases, hand whisk


  • 2 tsp Orgran Egg Replacer Use this if your baking plant-based/vegan cupcakes. Follow the instructions on the packet. Alternatively make a Flax egg. Use 2 tbsp of flax meal and 5 tbsp of water. Mix thoroughly and leave to rest for 15 minutes. This ensures the meal goes all gooey like an egg.
  • 2 Eggs If your not baking plant based or vegan
  • 175 grams soft brown sugar
  • 225 grams self-raising flour
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp mixed spice
  • zest of half a lemon
  • 100 grams grated carrot
  • 50 grams grated courgette
  • 5 tbsp sunflower/vegetable oil
  • 300 grams icing sugar for the frosting
  • 100 grams vegan soft cream cheese for the frosting
  • 1 tsp vanilla extract for the frosting
  • 12 halved walnut pieces optional, can use any other desired garnish
  • 1 whole orange/lemon/lime/tangerine optional, for garnish but can use any other replacement


  • If using the Orgran egg replacer, then prepare for 2 egg replacements. If using eggs then just lightly whisk with a fork. Preheat the oven to 160 Fan/180 Celsius/Gas 4.
  • In a mixing bowl tip the eggs, grated carrots, courgette, sugar and oil. Mix.
  • Add the flour, cinnamon, mixed spice and baking powder. Mix.
  • If your using the egg replacer, you might need to add 2-3 tbsp of water at this stage to loosen up the mix as I found the mix to stiff.
  • Place a fairy case in each of the 12 fairy cake baking tray holes. Divide the mix between the fairy cases.
  • Bake on the middle shelf for about 20-25 minutes. Test the mix is baked with a toothpick and if it comes out clean and the buns are lightly golden they should be perfect.
  • Leave for 10 minutes in the baking tray. Remove each bun and leave to cool on a wire rack.
  • To prepare the cream cheese. Either use vegan cream cheese which is widely available in most large supermarkets or health shops or use dairy cream cheese.
  • Add the cream cheese, half the icing sugar and vanilla to a mixing bowl. Whisk with a hand whisk, it'll look bitty to begin with but will soon come together. Whisk for about 3 minutes then add the rest of the icing sugar. Whisk for another 5 minutes until the frosting is stiff and can form little peaks. You could always whisk by hand also.
  • You could use an icing bag to ice a pretty pattern on top. Or use two teaspoons to mould a little oval shape or just spread on top. Add a halved walnut or other choice of garnish.
  • Sprinkle some grated zest on top. It could be lemon, orange or lime. I used tangerine.
  • Enjoy!

    Wow these look delicious! I’ve baked courgette in bread before but never in a cake!
    I’m interested in learning more about cinnamon potentially being used to treat Alzheimer’s in the future. I think it’s a wonderful idea to open up a conversation about Alzheimer’s, and baking the cakes to donate to a local care home is a great idea!

      Thanks!I haven’t tried courgette in bread but it sounds delicious. I find it fascinating how something so common place like cinnamon could have so much potential for our health. Especially for helping those with Alzheimer’s!
